Green Hummus





No one can deny this versatile dip! So many variations yet so tasty. Hummus is the easiest and tastiest dip!! I have tried so many variations and one of my favorite is the green hummus!


Soaked and pressure cooked chickpeas

Tahina paste

Garlic

Fresh parsley leaves

Fresh coriander leaves

Fresh green onion greens

Fresh basil

Lemon juice

Ice cold aquafaba

Freshly ground cumin

Ginger

Spinach leaves

Olive oil

Salt

Pepper


Instructions:

  1. Soak chickpeas overnight and pressure cook it for 8 whistles.

  2. Combine all the ingredients in a mixi bowl and grind.

  3. While grinding adding olive oil in batches.

  4. If hummus is too thick add ice cold aquafaba (the water from boiled chickpeas). This will make hummus light and fluffy.

  5. I used store bought tahini paste. You can replace it with some roasted sesame seeds paste mixed with olive oil.
